Chickpea Salad

Salads will never go out of style. Every time you feel like munching on something, keep the chips packet away and mix up a salad for yourself. Here’s a super easy Chickpea salad recipe that also gives you Collagen!

To make 4 servings of salad you will need:

2 cups chickpeas (rinsed)

1 sachet Red Berry Collagen Drink Mix

2 cups kale (chopped)

1 avocado (pit and skin removed)

3 tablespoons olive oil

1 tablespoon garlic (minced)

1 teaspoon paprika

¼ teaspoon of sea salt

¼ teaspoon black pepper

Preheat oven to 400°F and line two baking sheets with parchment paper. Rinse the chickpeas. Line chickpeas on a pan and add half of the olive oil, paprika, collagen powder, and minced garlic. Place in the oven and bake for about 35 minutes. While the chickpeas are baking, wash the kale and coat with the other half of olive oil, sea salt, and black pepper. Bake for about 10 minutes and remove from oven. Once the chickpeas and butternut squash are done, remove them from the oven and set them aside. Serve everything together on a plate with the avocado and enjoy!
