What if you tell you that you can eat sweets that are power-packed with collagen? We have found just the recipe for you that will help satisfy your Diwali cravings while providing you all the right nutrients. It is the perfect mixture of festivities and health.
Try this recipe for Collagen Coconut Barfi and serve it to guests or eat it as a pre-workout snack.
To make 12 Collagen Coconut Barfi you will need:
3 cups shredded coconut flakes
2 tbsp butter, melted
1/3 cup sugar (use a sugar-free sweetener as an alternative)
2 tsp vanilla extract (can substitute with lime zest)
1 tsp salt (1 additional tsp to top before baking)
2 mini chocolate chips (optional)
Start by pre-heating the oven to 350 degrees. In a food processor, pulse coconut until they are granular. Add in Red Berry Collagen Drink Mix and pulse a couple times to mix well. Add eggs, butter, sugar, salt and continue pulsing until combined and forms a sticky dough. Using an Ice Cream or Cookie scoop, scoop out 12 balls and place them on a parchment-lined baking sheet. Sprinkle just a pinch of salt on top of all cookies. Bake for around 14 minutes or until just browned on the top and around the edges. Sprinkle a little raw coconut over the top and allow them to cool for 5-10 minutes before serving.
